
Scott Updike - My research focuses on improving beef quality and consistency by developing applications to predict tenderness and examining factors which influence the development of intramuscular fat (marbling). The focus of my extension program is to coordinate with local extension educators to improve the sustainability of the Maryland beef industry, particularly through increased beef quality.
